Five ways with rainbow chard

One of the most popular vegetables in the Mediterranean, chard also is one of the most nutritious vegetables in the world. Its dark green leaves and vibrant-colored stalks are packed with vitamins K, A and C and contain beneficial antioxidants. Extremely versatile, chard can be incorporated into a variety of dishes, whether you’re cooking breakfast, lunch or dinner.
Chard is a nice match for eggs, especially when combined with a sharp cheese, such as fontina or pecorino. Also consider adding additional veggies, such as onions, diced potatoes or red peppers. Try our recipe for Seasonal Frittata, subbing in one bunch of chard, chopped, for the mushrooms.
