For a fresh take on seasonings, try these classes taught by Bastyr University nutrition graduates.

In Savor Southern Mexico, Trina Kauffman, who learned to make the regional dishes of Oaxaca, demonstrates the complex yet nuanced Mole Poblano, a rich, savory sauce for chicken made with spices, chiles and Mexican-style chocolate.

Christine Weiss explores many ways to enjoy the taste and health benefits of dark chocolate in Chocolate in Four Courses.

Santa Fe native Tiffany Pollard gets back to her roots in Sizzling Southwest Summer. She’ll feature a wheat-free menu with Red Chile-crusted Shrimp Skewers, Jalapeņo Corncakes, and Avocado-Tomatillo Salsa.

For more information about all classes, look in the PCC Cooks catalog available in stores, or online at www.PccCooks.com.
