Find your best beet

beets

Whether dainty and light in summer or dense and robust in the chilly months locally grown organic beets add a rich texture and flavor dimension to salads, soups and roast vegetable dishes.

These intensely colorful root vegetables are chock full of folate (which offers protection against birth defects), and plentiful in potassium and vitamin C. At PCC, our local beets arrive fresh from Rent's Due Ranch of Stanwood, Nash's Organic Produce of Sequim and Carnation's Full Circle farm.

Beets range in size from golf balls to baseballs, and the baby (bunched) beets are more tender than regular beets. Look for beets that are heavy and firm, not wrinkled or sprouting. If beet greens are still attached, they should be bright and fresh (just right for braising). Hear more from a beet expert.

Cooking with beets

Beets are delicious shredded crisp and raw into salads, roasted until they're buttery smooth in texture, or in traditional preparations like rich, red borscht. And don't forget, beet greens and greens from many other root vegetables are a nutritious option for braising.

From great relationships, great quality

PCC maintains close relationships with local and regional farmers to provide the best-tasting, freshest produce possible. More than 93 percent of produce sold by PCC is certified organic fruits and vegetables, grown without artificial pesticides or fertilizers. When organic varieties are not available or out of season, we offer high quality, non-organic produce. Learn more about the benefits of organics »
