Whether dainty and light in summer or dense and robust in the chilly months, beets add a rich texture and flavor dimension to salads, soups and roast vegetable dishes. These intensely colorful root vegetables are chock full of folate (which offers protection against birth defects), and plentiful in potassium and vitamin C.

At PCC, our local beets arrive fresh from Rent's Due Ranch of Stanwood, Nash's Organic Produce of Sequim and Carnation's Full Circle farm.

Find your best beet

Beets range in size from golf balls to baseballs, and the baby (bunched) beets are more tender than regular beets.

Look for beets that are heavy and firm, not wrinkled or sprouting. If beet greens are still attached, they should be bright and fresh (just right for braising).
