Whether dainty and light in summer or dense and robust in the chilly months, beets add a rich texture and flavor dimension to salads, soups and roast vegetable dishes. These intensely colorful root vegetables are chock full of folate (which offers protection against birth defects), and plentiful in potassium and vitamin C.
At PCC, our local beets arrive fresh from Rent's Due Ranch of Stanwood, Nash's Organic Produce of Sequim and Carnation's Full Circle farm.
Cooking with beets
Beets are delicious shredded crisp and raw into salads, roasted until they're buttery smooth in texture, or in traditional preparations like rich, red borscht. And don't forget, beet greens and greens from many other root vegetables are a nutritious option for braising.
