Lundberg Organic Arborio Rice
Choose Arborio rice for its creamy, chewy texture; for risotto.
Preparation: Heat 1 Tbl olive oil in a large pot. Saute 1/2 cup chopped onion. Add 1 cup rice; stir until grains are coated with oil. Add opt 1/2 cup wine; stir constantly on low heat until wine is absorbed. Add 1 cup hot stock or water, stirring until liquid is absorbed. Continue cooking and adding liquid 1 cup at a time, up to 4-5 cups total liquid, until creamy. Remove from heat; stir in 1/4 cup grated Parmesan cheese.
Yield: about 1 cup per 1/4 cup uncooked rice.
