Bulk Organic Organic Amaranth
Choose for its sticky texture and sweet taste. This annual herb is a relative of pigweed, a common wild plant also known as lamb’s-quarters.
Preparation: Bring 1 cup amaranth, 2 cups water and a pinch of salt to a boil. Reduce to simmer, cook covered about 25-30 minutes.
Yield: about 1/2 cup per 1/4 cup uncooked amaranth.
