Cristina Rebellon

Cristina Rebellon grew up as the youngest of five children in a northern suburb of Chicago. At thirteen, she recognized that the traditional Hispanic foods that her family enjoyed could be made healthier by adding more vegetables and using better oils. Ten years later, she became a registered dietitian and is still celebrating her favorite family recipes in her own home and with her students in nutrition classes at Concord International Elementary School in South Park. Her favorite recipe to make with students is Black Bean Tostadas because the students tell her it is their favorite recipe with kale in it.
