The Main Course Level II
This 15-hour demonstration course expands students’ knowledge of ingredients and further nourishes the art of improvisation, as you learn to compose meals with what is on hand in your pantry. Omid will demon- strate improvisational meal planning, from a one-pot meal to a sumptuous, seven-course extravaganza. He introduces theories and techniques of cooking soups, stocks, breakfast and desserts as well as the composition of balanced and nutritious meals. Class is based on lecture and demonstration. Prerequisite: completion of Level I demonstration course. Vegetarian; no dairy or eggs. Class size limited to 16.
