The Main Course Level I
This 15-hour demonstration course empowers students to tap into their improvisational talents and prepare delicious dishes from scratch with the freshest seasonal produce. You’ll learn to match produce with whole grains, beans, herbs and seasonings you may never have used before. You’ll also learn techniques for making complementary sauces from scratch to enliven any meal. Some useful information that is covered: •Which spices to use in particular culinary traditions •Ingredients to stock in your pantry •Cooking methods for any grain or bean •How to choose vegetables and cook with the seasons Class is based on lecture and demonstration. Vegetarian; no dairy or eggs. Class size limited to 16.
