Rachel prepares Honduran Rice and Beans with coconut milk and saffron; Sopa de Pescado (Honduran coconut fish stew) with peppers and potatoes; Coconut and Lime Shrimp Ceviche-style; and Coconut Lime Walnut Bites for dessert. With seafood; no dairy or eggs.
