Along her travels, Tiffany has found a handful of the most delicious gluten-free recipes from El Salvador, Belize and Panama. She will demonstrate how to make traditional Salvadorian Pupusas (corn masa flatbread stuffed with beans and cheese), browned on a hot griddle, accompanied by Curtido de Repollo (tangy cabbage salad). Central America is known for its seafood; you will also learn how to make Shrimp Ceviche-style (cooked for flavor and safety) served with Belizean Coconut Rice and beautifully scented Panamanian Spiced Squash. For a sweet ending, enjoy Pumpkin Butter Cacao Mole with Sliced Pears. With seafood; no eggs or gluten. Dairy optional.
