Golden Beetle is the third restaurant in the country to receive Oregon Tilth’s organic certification. Rooted in the cultures and culinary styles of the Mediterranean, it uses spices and flavors with the Northwest’s best organic and seasonal ingredients. Chef Ariel has assembled a delightful vegetarian menu of Kale Salad with Harissa Vinaigrette, Mascerated Currants and Nicoise Olives; Green Beans Lubia (with seasoned tomato sauce); and Roasted Eggplant with Bulgur, Yogurt and Charmoula sauce. Dessert is a light Melon Sorbet with Grilled Melon, Mint and Hot Paprika. Vegetarian, with dairy; no eggs. Class size limited to 14.
