Healthy Kids Cook
ParentMap and PCC have partnered to produce a web series called Healthy Kids Cook, designed to encourage families to make a healthy habit of cooking fresh food together. Each month, PCC Chef Jackie Freeman hosts families in the PCC kitchen to create an easy, kid-friendly recipe featuring seasonal fruits and vegetables.
Watch PCC Chef Jackie Freeman make these parchment packets with 7-year-old Ethan, who works with his family and the American Heart Association to raise awareness of childhood heart defects. Made with wild salmon and a minimal amount of added salt, this delicious recipe does your heart good!
PCC Chef Jackie Freeman invited Jodi Brothers from KJR 95.7 The Jet and her son's best friend Coco to make Chocolate Avocado Pudding. A heart-healthy dessert that can be made in minutes? Dreams can come true! With a blend of two fruits, Fair Trade cocoa powder, a touch of honey and almond milk, this creamy pudding has purely decadent flavor and texture created from remarkably healthy ingredients.
PCC Chef Jackie Freeman invited two Girl Scouts, Becca and Nur, to the kitchen to help make Weeknight Noodle Bowls, an easy, flexible way to get a healthy dinner on the table for everyone in the family. The girls learn to hard boil eggs in the process, but they also try a variety of proteins and veggies.
Cranberry-Lemon Muffins (04:20)
Bounce those berries! PCC Chef Jackie Freeman makes healthy sweet-tart Cranberry-Lemon Muffins with her young helpers (and dedicated Seahawks fans) Gage and Dani, and their mom Diana. The kids do a great job stirring, even kicking it up into Beast Mode.
Apple Pie Morning Oatmeal (03:38)
A healthy breakfast that tastes just like apple pie? Sounds perfect for fall. PCC Chef Jackie Freeman works with Ryleigh and Maya to cook steel-cut oats and caramelize apples — it’s amazing just how much the kids can accomplish in the kitchen, right down to their big jazz hands finish!
Mini Corn Quiches (05:03)
These easy quiches ditch traditional pie crust for lightly buttered whole wheat toast. PCC Chef Jackie Freeman and her kid helper Cainen make quick work of them, and Cainen gets to try cracking eggs for the first time. Mom's role? She gets to help "next time!"
Summertime Fritters (05:09)
Gad zukes! A food processor and a few common ingredients help these fritters come together with ease. PCC Chef Jackie Freeman gets lots of assistance with vegetable prep from her helper Jasper and his mom, Claudia. Jasper loved these fritters – we hope your family does, too!
