Tuscan White Bean Soup

Serve with fresh-baked crusty peasant bread and olive tapenade for a quick and satisfying meal.
Ingredients
- 2 cloves garlic, minced Add to list
- 1 small onion, finely chopped Add to list
- 3 tablespoons olive oil Add to list
- 1 15-oz can of white beans, rinsed and drained Add to list
- 4 cups stock Add to list
- 1/4 teaspoon dried sage Add to list
- 1 teaspoon dried basil Add to list
- Salt and pepper Add to list
Preparation
Sauté garlic and onion in olive oil until soft. Add remaining ingredients and simmer for 15 to 20 minutes. Season with salt and pepper. Garnish with freshly chopped parsley and grated Parmesan cheese.
