For the crust

Put all ingredients into a food processor; process until well combined. Press evenly into a greased standard tart dish; make sure to push it up onto the sides. Chill the crust for 20 to 30 minutes before adding the filling.

For the filling

Put all ingredients into a medium saucepan and bring to a simmer, while stirring, to combine. Simmer for 8 to 10 minutes, until rhubarb is soft. Pour into chilled nut crust, add some sprigs of fresh thyme for garnish and chill for at least 1 hour before serving.

Each serving: 320 cal, 4 g fat (0 g sat), 0 mg chol, 160 mg sodium, 36 g carb, 6 g fiber, 8 g protein

Dates

Can the dates be omitted from this recipe? Those of us who control their blood sugars with a low carb diet the dates are terrible for. Dates drive blood sugar way up. Thanks.

Hello,

As a diabetic myself, here is how I would adjust the recipe to decrease the amount of sugar in this once-in-a-while treat.

For the crust, fortunately the good fats and fiber in the nuts slows things down a little bit. I think you can get away with cutting the number of dates in half. (Perhaps add another tablespoon of coconut oil and let the tart cool entirely before cutting.) The dates really do act as the binder for the crust, so omitting them altogether will likely produce a very crumbly crust that doesn’t hold together.

Another option would be to omit the dates entirely and use the rest of the “crust” ingredients on top of the fruit filling instead before baking, in effect making a crumble. Make sure to grease your pan well.
