Strawberries with Mascarpone Cream

Simple, yet elegant and decadent.
Ingredients
- 1 pound strawberries, hulled and quartered Add to list
- 1/2 cup whipping cream Add to list
- 2 teaspoons vanilla Add to list
- 1/4 cup granulated sugar Add to list
- 1 cup mascarpone cheese Add to list
- 1/3 cup coarsely grated dark chocolate Add to list
Preparation
Divide the strawberries into 4 bowls. Place the cream and vanilla in a mixing bowl and beat at high speed until cream begins to thicken. Sprinkle in the sugar and continue beating until stiff peaks form.
Fold in the mascarpone cheese. Stir in the chocolate. Top the berries with the cream mixture. Serve immediately.
Notes
The cream mixture may be made ahead of time and refrigerated until ready to serve.
