Spicy Soda Glazed Ham
Serves: 8 to 10
A PCC riff on the southern classic co’cola-basted ham, this glaze uses a natural soda, made with real sugar and no caramel coloring. Choose root beer or ginger ale as you prefer – both are equally delicious. Don’t substitute a soda made with stevia or any type of artificial sweetener; these develop unpleasant off flavors during baking.
Preheat oven to 325° F. Score ham lightly with a paring knife and place in a large roasting pan. Slowly pour the soda over it.
Stir together molasses, mustard, brown sugar and cloves. Carefully spread the mixture on ham. It’s OK if some of it falls into the pan, but most of it should stick in place.
Bake the ham until an internal temperature taken with an instant-read thermometer reads 140° F, 1 1/2 to 2 hours. Baste with pan juices every 20 minutes.
Let ham stand 15 minutes before carving.
Some ginger ales are very heavily spiced with fresh ginger, like Reed's Extra Ginger Brew. The ginger essence, along with its warm, spicy kick, will concentrate during cooking. Unless you are a serious ginger aficionado, aim for one (like Reed's Original or Santa Cruz Spritzer) with less ginger.
