Spicy Greens

Light, nutritious greens are a welcome addition to heavy holiday spreads. But just because they’re good for you doesn’t mean they have to be dull — with balsamic vinegar and a shock of red pepper, this Lacinato kale dish is anything but.

Ingredients

Preparation

Wash kale leaves and remove any tough stems. Do not dry, as water remaining on leaves helps to steam the greens. Gather a handful of leaves and slice on the diagonal into 1/2-inch-wide strips.

Heat olive oil in a sauté pan over medium heat. Add garlic and stir for 2 to 3 minutes.

Add kale and red pepper flakes. Cover. Stir frequently to prevent burning for 5 to 7 minutes. Add small amounts of cold water as needed.

Remove from heat and add vinegar, salt and pepper. Serve immediately.
