A cross between nectarine (or peach) juice and lemonade, this cooling drink is perfect for summer fruit.
Combine water, nectarines and honey in a saucepan. Bring to a boil. Reduce heat and simmer for 3 minutes. Let mixture cool and then carefully blend until smooth.
Pass the juice through a strainer into a bowl, pressing lightly on the pulp to release extra juice. Stir in lemon juice and sparkling water. Add more honey, if needed. Serve in tall glasses over ice.
