Smoked Salmon Reuben Sandwich

Tree nut-free
For a nondairy version use avocado slices instead of cheese.
Ingredients
- 1/2 pound smoked salmon Add to list
- Your choice of condiments: pickle relish, ketchup, mayonnaise, mustard, etc. Add to list
- 4 slices rye bread Add to list
- 2 slices Havarti or Swiss cheese Add to list
- 3/4 cup sauerkraut Add to list
- 2 teaspoons butter Add to list
Preparation
Cut salmon into thin slices. Spread preferred condiments on each side of the bread. Place cheese on one side, salmon on the other. Put 1/2 of the sauerkraut on top of the salmon. Put sandwiches together.
Heat butter in a large skillet over medium heat. Place sandwiches in the skillet, salmon-side down and brown the bread. Flip the sandwich, cover skillet with lid and heat until the cheese melts and the other side of the bread browns. Cut in half and serve.
