Yummy Raw Kale Salad

Yield: 6-8 cups
Prep time: 25 minutes
I learned this recipe from my sister-in-law who eats 80% raw foods. She is not sure the source of this recipe, but it is delicious and healthy.
Tear the kale off the stalk and into small pieces; about 2 inches or so.
Add oil and honey and massage by hand for 5 minutes. This is fun!
Add garlic, pine nuts and raisins. ENJOY!
Be creative and substitute agave for honey, walnuts and/or dried cranberries for example.
Adjust amounts to your preference. I love extra garlic and some like to use less honey and oil. Make the dish to suit your taste.
May be enjoyed immediately or stored in the refrigerator for 1 week.
