Halloween Fries

This is an easy and tasty way to serve high-antioxidant sweet potatoes to kids and adults alike. They are full of flavor and very low in fat, since they are baked instead of fried. This recipe is adapted from one presented at a PCC Cooks class called "Fast Food for Busy Moms and Dads" by Julie Negrin.
Ingredients
- 1-1/2 pounds sweet potatoes, peeled or unpeeled (about 2) Add to list
- 2 tablespoons olive oil Add to list
- Coarsely ground salt Add to list
- Coarsely ground black pepper Add to list
Preparation
Preheat oven to 450° F.
Wash sweet potatoes very well.
Cut sweet potatoes into equal-sized pieces about 2-1/2 inches by 1/2 inch by 1/2 inch (or larger or smaller, depending on how you like your fries) and place in a medium-sized bowl. Toss well with olive oil and salt.
Spread on a baking sheet so that fries are not touching. Bake for about 20 minutes, flipping them once mid-way through. Sprinkle with salt and pepper and serve immediately.
