PCC Roasted Fingerling Potatoes

Ingredients
- 1 pound organic fingerling potatoes, scrubbed and cut in half lengthwise Add to list
- 1 tablespoon extra-virgin olive oil Add to list
- 1 large garlic clove, finely minced Add to list
- 1/2 teaspoon dried thyme Add to list
- 1 tablespoon fresh thyme leaves Add to list
- Salt and pepper to taste Add to list
Preparation
Preheat oven to 375° F.
Combine potatoes with extra-virgin olive oil, minced garlic, dried thyme, and salt and pepper. Place in a single layer on a sheet pan. Roast for 15 minutes, remove from oven and stir. Return to oven and continue to roast until potatoes are tender and crispy, about 20 to 25 more minutes.
Toss with the fresh thyme leaves and serve.
