Quick-Fix Creamy Tofu Tomato Soup
Place all ingredients in a blender and purée. Heat on low for about 5 minutes until piping hot. Taste adjust if needed. Enjoy!
Variation: Tired of the third night of your potato or vegetable soup? Toss it in the blender with tofu and re-heat the puréed results. Add a bit of fresh minced parsley or cilantro or celery as an added "zip" of color.
