Pumpkin Date Bread

Ingredients
- 1 1/2 cups white spelt flour Add to list
- 1 teaspoon salt Add to list
- 1/2 cup chopped dates Add to list
- 1/2 teaspoon nutmeg Add to list
- 1 teaspoon cinnamon Add to list
- 1 teaspoon ginger Add to list
- 1 teaspoon baking soda Add to list
- 1 cup cooked pumpkin Add to list
- 1/2 cup unsalted butter, melted Add to list
- 3/4 cup unrefined sugar Add to list
- 1/4 cup buttermilk Add to list
- 2 eggs, beaten Add to list
- 1 teaspoon vanilla Add to list
Preparation
Preheat oven to 350º F. Grease and flour a 9x5-inch loaf pan. Set aside.
In a medium bowl, stir together flour, salt, dates, nutmeg, cinnamon, ginger and baking soda. In a large bowl, stir together pumpkin, butter, sugar, buttermilk, eggs and vanilla.
Add dry mixture to wet and stir until just combined. Pour into prepared loaf pan and bake 40 minutes or until a knife inserted in the middle comes out clean.
