Plum Chutney
Yield: Makes 12 (half-pint) jars.

This simple recipe is a delicious way to preserve the fresh flavor of summer.
Ingredients
- 3 pounds plums (about 6 cups, pitted) Add to list
- 4 1/2 cups brown sugar or honey Add to list
- 1 1/2 cups apple cider vinegar Add to list
- 3 3/4 cups raisins Add to list
- 1 1/2 teaspoons each cayenne, allspice, cloves, ginger, pepper and cinnamon Add to list
Preparation
Cook plums on medium-low heat until soft, stirring so they don't scorch. Add all ingredients and cook another 30 minutes to one hour. Fill half-pint canning jars. Process in boiling water bath for 20 minutes.
