Kao Tom Buey (Rice Porridge)
Yield: 4 cups (enough to make 4 servings of Thai Rice Soup)
Prep time: 20 minutes
Bring jasmine rice and 2 cups of the water to a boil on high heat. Stir often while cooking for 5 minutes.
Add the remaining 4 cups water and bring to a boil. Let cook on medium heat for 15 minutes more, until it yields 4 cups.
