Yield: 2 17-inch pizzas
In a bowl, put 3 cups warm water, sugar, and yeast. Let stand for 15 to 20 minutes or until it bubbles.
Add 1 tablespoon salt and stir. Add 5 cups of flour and stir at #2 speed on Kitchen Aid for one minute. Add 1 cup more of flour. Add more flour, if needed, until dough separates from the bowl. The dough should be almost sticky. Keep on #2 speed for 8 to 10 minutes.
Put dough on lightly floured surface and knead a few times. Divide the dough in half and place in two oiled medium bowls. Cover with plastic wrap and a kitchen towel. Let it rise about one hour or until it doubles.
