Pear Tart

Take advantage of the season's freshest, organic pears with this simple and delicious pear tart. For the crust, we suggest using coconut oil, which is excellent for baking and is lower in calories and fats than most oils.
Ingredients
For crust:
- 2 tablespoons sugar Add to list
- 1 cup flour Add to list
- 1/3 cup coconut oil Add to list
- 4 tablespoons butter Add to list
- ice water Add to list
For filling:
- 2 tablespoons chopped hazelnuts Add to list
- 4 Bartlett pears Add to list
- 1 lemon Add to list
- 2 tablespoons sugar Add to list
- 1/4 teaspoon ground cardamom Add to list
- 2 tablespoons fruit jelly Add to list
Preparation
In a food processor, combine sugar, flour, cup coconut oil and butter. While processing, slowly add 2 tablespoons ice water until dough forms. Press into an 8-inch square pan. Brush lightly with 1 beaten egg yolk and pierce several times with a fork.
Sprinkle chopped hazelnuts evenly over crust. Peel, core and slice the pears and toss with lemon zest and juice from one organic lemon. Arrange pear slices over hazelnuts. Combine sugar and cardamom and sprinkle over pears.
Bake at 350º F for 30 minutes, remove from oven and brush with fruit jelly.
