PCC Roasted Tomatoes

Ingredients
- 2 cups (or more) quartered tomatoes Add to list
- 2 tablespoons olive oil Add to list
- 1 teaspoon minced garlic Add to list
- 1 teaspoon balsamic vinegar Add to list
- Salt and pepper to taste Add to list
Preparation
Preheat oven to 425° F. Toss tomatoes with olive oil, garlic, vinegar, salt and pepper. Roast for 12 to15 minutes, or until lightly browned.
