PCC Mashed Yams and Goat Cheese
Serves: 8 to 12
Peel yams and cut into equal size pieces. Steam or boil 15 to 20 minutes, or until soft and fully cooked. Drain and let rest a minute or so to evaporate excess moisture.
Place yams, cheese and butter in mixer. Mix with a whip on low speed until smooth and fluffy. Season to taste with salt and pepper.
Each serving: 240 cal, 14g fat (9g sat), 35mg chol, 320mg sodium, 24g carb, 4g fiber, 8g sugars, 7g protein
