PCC Chocolate Torte

This simple recipe substitutes tofu for cream cheese and makes a rich and delicious dessert — packed with healthy omega-3s.
Ingredients
- 2 cups maple granola Add to list
- 2 tablespoons Earth Balance margarine Add to list
- 3 12-oz packages of soft tofu Add to list
- 6 cups chocolate chips Add to list
- 1 tablespoon vanilla Add to list
Preparation
Crust
Mix maple granola and margarine in a food processor until combined. Press into a 9-inch springform pan and bake at 300º F for 10 minutes. Cool.
Filling
Purée tofu in a food processor until smooth. Melt chocolate chips in a double boiler and mix melted chocolate with tofu and vanilla. Pour filling into cooled crust and chill for one hour.
