This simple recipe substitutes tofu for cream cheese and makes a rich and delicious dessert.



Mix maple granola and margarine in a food processor until combined. Press into a 9-inch springform pan and bake at 300º F for 10 minutes. Cool.

Purée tofu in a food processor until smooth. Melt chocolate chips in a double boiler and mix melted chocolate with tofu and vanilla. Pour filling into cooled crust and chill for 1 hour.
