PCC Chocolate Torte
This simple recipe substitutes tofu for cream cheese and makes a rich and delicious dessert.
Preheat oven to 300°F.
Mix maple granola and margarine in a food processor until combined. Press into a 9-inch springform pan and bake at for 10 minutes. Cool completely.
Purée tofu in a food processor until smooth. Melt chocolate chips in a double boiler and slowly mix melted chocolate with tofu. Stir in vanilla. Pour filling into cooled crust and chill for at least 1 hour before serving.
