North African Spice Mix

Use this spice mix in the recipe for Lentil Ginger Coconut Soup.
Ingredients
- 2 teaspoons fenugreek Add to list
- 1 teaspoon cumin Add to list
- 4 whole cloves Add to list
- 1 teaspoon peppercorns Add to list
- 1 teaspoon whole coriander Add to list
- 1 teaspoon caraway seeds Add to list
- 1 teaspoon paprika Add to list
- 1/2 teaspoon mustard seeds Add to list
Preparation
In a large, dry skillet, toast the spices (stirring or shaking frequently to prevent burning) until they turn a shade or two darker and become aromatic, about 2 to 3 minutes. Let cool. Grind spices to a fine powder and store.
