Mchuzi Wa Samaki (Fish Stew)

Ingredients
- 4 halibut fillets Add to list
- 1/2 bunch collard greens, chopped Add to list
- Large red onion, chopped Add to list
- 1 cup carrot, chopped Add to list
- 1 cup yam, peeled and cubed Add to list
- Fish or vegetable stock Add to list
- Salt to taste Add to list
- 8 cloves garlic, mashed Add to list
- 1/2 teaspoon fresh ginger, mashed Add to list
- 1/2 teaspoon fenugreek seeds Add to list
- 1 teaspoon coriander seeds Add to list
- 1 teaspoon cardamom Add to list
- 1 tablespoon black pepper Add to list
- 1/2 cup cilantro, finely chopped Add to list
Preparation
Cut fish into bite-sized pieces. In soup pot, add fish, greens, onions, carrots, yam, and enough stock to cover ingredients. Bring to a boil and cook for 10 minutes. Add salt, garlic, fenugreek, coriander, cardamom and pepper. Lower heat and simmer until tender, about 20 minutes. Remove from heat. Stir in cilantro. Serve with basmati rice.
