PCC Marinated Beets

A PCC Deli favorite — this recipe uses a beautiful whole food that grows well in our local climate. If you think you don't like beets, this recipe may just change your mind. The sweetness of the beets and the tartness of the vinegar make this a refreshing dish. This is a nice picnic salad.
Ingredients
- 6 to 8 organic beets Add to list
- 1 organic red onion, quartered and sliced thin Add to list
- 1 cup organic raspberry vinegar Add to list
- Salt to taste Add to list
Preparation
Steam beets in a pot until tender. Slip off peels under cool running water while beets are still warm. Cut into bite-size pieces. Toss with red onion and vinegar. Salt to taste.
Serve at room temperature or chilled.

Marinated beets
They are right - I never liked beets until I tried these. Now I use them a lot - alone or in salads. My family likes them, too. And, they stay refrigerated for a long time. I give them 5 stars.
