Maple Pecan Divinity or Icing
This recipe is:

Gluten-free
Peanut-free
Soy-free
Wheat-free
Delicious either as candy, or spread on cooled, rolled cookies.
Ingredients
- 3/4 cup maple syrup (or light honey) Add to list
- 1/4 cup water Add to list
- 1 teaspoon white vinegar Add to list
- 1 egg white (or Ener-G Egg Replacer, according to box) Add to list
- 1/2 cup chopped pecans (raw or pan toasted) Add to list
- 1 teaspoon vanilla Add to list
Preparation
Cook first three ingredients in heavy pot to firm ball stage (consult candy section of any cookbook). Meanwhile, beat egg white or substitute until stiff, not dry. When syrup is at firm ball stage, pour it slowly into beaten egg white, beating continually until creamy, light and firm. Mix in 1/2 cup chopped pecans and 1 teaspoon vanilla. Let cool slightly, then use to frost cookies lightly. (For light colored frosting, use light honey instead of maple syrup, and add a little maple flavoring if desired.)
