Maple Pecan Divinity or Icing

Delicious either as candy, or spread on cooled, rolled cookies.

Preparation

Cook first three ingredients in heavy pot to firm ball stage (consult candy section of any cookbook). Meanwhile, beat egg white or substitute until stiff, not dry. When syrup is at firm ball stage, pour it slowly into beaten egg white, beating continually until creamy, light and firm. Mix in 1/2 cup chopped pecans and 1 teaspoon vanilla. Let cool slightly, then use to frost cookies lightly. (For light colored frosting, use light honey instead of maple syrup, and add a little maple flavoring if desired.)
