Mango-glazed Sweet Potatoes

Ingredients
- 2 to 4 Red Garnet or Jewel sweet potatoes Add to list
- 1 tablespoon high-heat oil Add to list
- Salt and pepper, to taste Add to list
- Mango chutney Add to list
Preparation
Preheat oven to 400° F.
Peel sweet potatoes and cut into 8 lengthwise wedges. Toss with oil and sprinkle with salt and pepper. Place on a parchment paper-lined baking sheet. Bake 20 to 25 minutes in oven until just fork tender.
Reduce heat to 350º F. With a pastry brush, coat wedges with mango chutney. Bake 10 minutes more or until soft inside. Brush with a little more chutney before serving.
