Low-fat Yogurt, Lime and Ginger Sauce

Ingredients

Preparation

Grate 1 inch or so of ginger root into a saucer with three layers of cheese cloth in 4-inch squares. Mix other ingredients in a bowl, using a small wire whisk or fork. Pick up ginger in cheese cloth, wringing juice into spoon and add to dressing. Chill, covered, for several hours to develop best flavor. For thinning, add a little water.
