Low-fat Yogurt, Lime and Ginger Sauce

Prep time: 5 minutes; best if chilled 4 to 12 hours

Ingredients
- 1/2 cup non-fat yogurt Add to list
- 1/4 cup sour half-and-half or cream Add to list
- 1/4 cup Quark or dripped non-fat yogurt cheese Add to list
- 1 tablespoon fresh-squeezed lime juice Add to list
- 1 teaspoon grated organic lime rind Add to list
- 1/2 teaspoon (or more) fresh juice of ginger root Add to list
- 1/4 teaspoon each ground mace and nutmeg Add to list
Preparation
Grate 1 inch or so of ginger root into a saucer with three layers of cheese cloth in 4-inch squares. Mix other ingredients in a bowl, using a small wire whisk or fork. Pick up ginger in cheese cloth, wringing juice into spoon and add to dressing. Chill, covered, for several hours to develop best flavor. For thinning, add a little water.
