Kuey Buod Chee (Fragrant Bananas in Coconut Cream)
Kuey Buod Chee means banana in a nun's hood. This recipe is easy to make and it can be served warm or cold. Any leftovers make great milkshakes.
Peel bananas and cut in half. In a saucepan, bring 1/4 cup coconut milk and water to a boil. Add sugar and salt, and cook until dissolved. Add bananas and let boil for 1 minute.
Add remaining coconut milk. Serve bananas with plenty of the coconut liquid so that they partially float. Sprinkle with cinnamon.
Serve with vanilla or coconut ice cream, if you like.
