Kitchen Sink Quiche

This makes an easy meal using whatever leftover grated cheese, vegetables, meat or seafood you have on hand — most any combination will work. You’ll find Wholly Wholesome organic frozen pie shells at PCC in three varieties: traditional, whole wheat and spelt. Made with organic ingredients, they’re deliciously flaky and a wonderful time-saver.
Ingredients
- 3 eggs Add to list
- 1 cup milk Add to list
- Salt and pepper to taste Add to list
- Herbs of choice (optional) Add to list
- 1 cup grated cheese of any kind Add to list
- 1 (9-inch) frozen pie crust, thawed Add to list
- 1 to 1 1/2 cups vegetables or meat for the filling Add to list
Preparation
Preheat oven to 375° F.
In a medium bowl, whisk together eggs, milk, salt and a few grinds of pepper. If you like, add thyme, tarragon, basil, oregano or other herbs if they go well with your ingredients. Set aside.
Sprinkle the grated cheese over the pie crust. Top with your choice of filling. If you are using vegetables sauté them first, unless they already are cooked. Gently pour the egg mixture over the cheese and filling.
Place the filled pie on a baking sheet and bake for 35 to 45 minutes, or until just set. Remove from oven and let the quiche rest for 8 to 10 minutes before slicing and serving.
