Jerry's Easy Rice

You can use this rice as an accompaniment to Easy Chicken Enchiladas. If you start the rice as you put the enchiladas in the oven, they should be done at about the same time!


  • 1 cup long grain rice (rinsed) Add to list
  • 2 cups water (or chicken, vegetable or mushroom stock) Add to list


Place rice and water (or other stock) in saucepan. Heat over high heat until it reaches a boil. Give it a good stir, cover, and turn down to lowest setting. Cook undisturbed for 15 minutes and you should have perfect rice!

For a little flavor, try adding a packet of taco seasoning mix as you add the water or stock. Be careful, it may not take the whole packet, depending on how flavorful you want it. Enjoy!
