Janice's Paleo Meatloaf

Ingredients
- 2 pounds grass-fed organic extra-lean ground beef Add to list
- 2 red onions, finely chopped Add to list
- 4 cloves garlic, minced Add to list
- 1/2 red pepper, chopped Add to list
- 1/2 cup chopped fresh cilantro Add to list
- 1/2 cup chopped fresh parsley Add to list
- 2 teaspoons cumin 1 teaspoon pepper Add to list
- 3 omega-3-enriched organic eggs, beaten Add to list
- 2 tablespoons olive oil Add to list
Preparation
Preheat oven to 400° F. Mix all ingredients together in a large mixing bowl. Spread mixture evenly in a 9x12-inch baking dish. Bake for 45 minutes or until well cooked.

Janice's Paleo Meatloaf
Good basic recipe. Way too many onions. Freezing it to use in chili or spaghetti sauce. Next time will use 1/2 onion and one red pepper, one poblano. Substituted 3 t ground pasilla chile for the cumin and pepper. Worked well.
