Israeli Salad
Serves: 4-6
This recipe is:

Ingredients
- 1 English cucumber Add to list
- 3 to 4 Roma tomatoes Add to list
- 1 green pepper Add to list
- 1 yellow pepper Add to list
- 4 stalks celery Add to list
- 1/4 cup fresh mint, chopped Add to list
- 1/2 cup feta cheese, crumbled (optional) Add to list
Dressing
- 3 tablespoons extra-virgin olive oil Add to list
- 2 to 3 tablespoons lemon juice Add to list
- Salt and pepper to taste Add to list
Preparation
Rinse all the vegetables, and then dice them evenly. Mix vegetables with mint and feta (if using) in a mixing bowl. Add dressing and mix well.
