Indian Split Pea Soup
Serves: 5 to 6
This easy vegan soup has rich flavor, sparked up with a hit of fresh lemon juice right before eating.
Bring water to boil over high heat in a large saucepan. Add split peas. Lower heat and cook for 20 minutes, stirring occasionally, until peas are soft and tender.
Add spices and carrots and continue to cook for 15 minutes. Serve each bowl with a lemon quarter to garnish soup.
