Huevos Rancheros Breakfast Burrito

Ingredients
- 1 organic sprouted wheat tortilla Add to list
- 1/4 cup prepared seasoned black beans, refried beans, or your favorite bean dip, heated Add to list
- 1 egg, scrambled Add to list
- 1/2 diced roma tomato Add to list
- 2 tablespoons shredded cheddar cheese Add to list
Optional
- Salsa Add to list
- Sour cream Add to list
- Diced avocado Add to list
- Steamed or sautéed greens Add to list
Preparation
Heat tortilla in a cast-iron pan or warm oven for about a minute to soften. Remove from heat then spread with heated beans, egg, tomato, and cheddar. Add any desired optional ingredients, then wrap and serve.
