Grilled Salmon Steaks
Optional: 2 cups alder, apple, or hickory wood chips, soaked and drained
Press 5 to 6 juniper berries or peppercorns into each salmon steak. Lightly season with salt. Sprinkle optional wood chips on white hot coals. Grill steaks 3 to 4 minutes per side. Fish is done when it flakes when pierced with a fork. Serve with lemon wedges.
