Grilled Corn on the Cob

The silk in unhusked corn adds sweetness and extra moisture to protect the kernels from the heat so they stay tender.
Ingredients
- 8 ears of corn, unhusked Add to list
- 1/4 cup chopped, mixed fresh herbs, such as chives, parsley, basil, sage and tarragon Add to list
- 6 tablespoons butter Add to list
- Juice of 1 lime Add to list
Preparation
Grill unhusked corn on lightly oiled grill rack, covered. Grill over medium-hot charcoal (moderate heat for gas) until kernels are tender, 20 to 30 minutes. Turn corn occasionally. If you can’t grill outdoors, corn can be roasted directly on middle rack of a preheated 450° F oven for 30 minutes.
Remove corn and let stand until cool enough to handle but still warm, about 10 minutes. Discard husks and stem ends from corn. Cut kernels off cobs and toss in a large bowl with herbs, butter and lime juice.
