Goat Cheese Tostas
Serves: 6 to 8

Ingredients
- Day-old baguette, sliced Add to list
- 6 ounces soft goat cheese Add to list
- 2 tablespoons minced oil-packed sun-dried tomatoes Add to list
- 1 tablespoon coarsely chopped capers Add to list
- 1 teaspoon hot or smoked paprika Add to list
- 1/2 teaspoon minced fresh thyme Add to list
Preparation
Preheat oven to 300° F. Place baguette slices on a cookie sheet and toast until lightly browned, 5 to 10 minutes on each side.
Heat broiler, with the rack about 6 inches below heat source. Line a cookie sheet with foil.
Combine remaining ingredients, mixing well. Spread each slice of toast with a heaping teaspoon of the cheese mixture. Place tostas on cookie sheet and broil until cheese is hot and slightly puffy, about 2 minutes. Watch closely, as they brown quickly.
