Eggs Nestled in Greens

Ingredients
- 1 clove garlic, minced Add to list
- 1 tablespoon minced ham (optional) Add to list
- 1 tablespoon olive oil Add to list
- 2 handfuls chopped greens (kale, chard, collards, etc.) Add to list
- 2 eggs Add to list
- Salt and pepper, to taste Add to list
- Parmesan cheese Add to list
Preparation
Sauté garlic and ham in olive oil. Toss in greens and a splash of water, and cook until almost tender.
Make two indentations in the leaves and crack 1 egg into each indentation. Sprinkle with salt and pepper, cover, and cook for 3 to 5 minutes, or until desired level of doneness.
Scatter shaved Parmesan over the top and serve.
