Eggs Nestled in Greens
Sauté garlic and ham in olive oil over medium heat for 2 to 3 minutes. Toss in greens and a splash of water. Cover and cook until greens are almost tender, 3 to 5 minutes.
Make two indentations in the leaves and crack 1 egg into each indentation. Sprinkle with salt and pepper, cover, and cook for 3 to 5 minutes, or until desired level of doneness.
Scatter shaved Parmesan over the top and serve.
