Crispy Apple Triangles
Yield: About 36 small triangles

Easy but elegant.
Ingredients
- 1/2 cup sliced almonds Add to list
- 2 teaspoons cinnamon Add to list
- 4 tablespoons organic whole cane sugar (we use Rapunzel) Add to list
- 1 packet phyllo dough, defrosted (24 sheets) Add to list
- 1 stick butter, melted Add to list
- 2 cups applesauce Add to list
- Vanilla ice cream Add to list
Preparation
Preheat oven to 400º F.
Combine almonds, cinnamon and sugar in a small bowl and mix well. With a pastry brush, brush 1 phyllo sheet with butter, then sprinkle with some of the cinnamon mix. Place another phyllo sheet on top of the first.
Cut the phyllo into 3 pieces, lengthwise. On the end of each phyllo strip, place 1 big tablespoon of applesauce. Fold the phyllo dough on top of the applesauce, making a triangle. Fold until the phyllo is wrapped around the applesauce. Brush with butter. Repeat with the other phyllo strips.
Place apple triangles on a baking sheet lined with parchment paper. Bake for about 15 to 20 minutes, or until lightly golden and crispy.
Serve warm or at room temperature with vanilla ice cream.
