Cream of Tomato Soup
Serves: 2 to 4
The brightness of tomatoes is balanced by smooth cream in the vodka sauce and fresh basil in this easy-to-prepare soup. Top with herbed croutons, if desired.
In a soup pot, sauté onions and garlic in butter until soft, about 5 minutes. Add tomato vodka sauce and 1 or 2 cups stock (depending on desired consistency) and simmer for 10 minutes.
Ladle into bowls and garnish with freshly chopped basil.
Make it a meal with a grilled cheese sandwich or pick up PCC Hearty Greens Caesar Salad or PCC Emerald City Salad in the deli.
