Cream of Tomato Soup

The brightness of tomatoes is balanced by smooth cream in the vodka sauce and fresh basil in this easy-to-prepare soup. Top with herbed croutons, if desired.

Preparation

In a soup pot, sauté onion and garlic in butter until soft. Add tomato vodka sauce and 1 or 2 cups stock (depending on desired consistency) and simmer for 10 minutes.

Ladle into bowls and garnish with freshly chopped basil.

Notes

Make it a meal with a grilled cheese sandwich or pick up PCC Hearty Greens Caesar Salad or PCC Emerald City Salad in the deli.
